You know what I just discovered? Sauteed kale is fabulous with tomato sauce, particularly some sort of marinara/spaghetti sauce. I can put a bit of parmesan on top and pretend I’m eating pasta without all the calories. I like kale and hardy greens in general – just saute with a little olive oil and garlic, maybe add some broth or a bit of water to steam and then cook down the liquid, and boom, you’ve got a great side dish that is also good for you. I’ve got some Swiss chard maturing in the garden that I should try it with as well.
Anyone out there have a favorite kale recipe? I love it in soups in the winter but I usually forget to eat it in the summer.
