Balsamic Garden Chicken
I made this last week using the first of my tomatoes. It’s inspired by a recipe from emeals, but I changed it up quite a bit, because that’s how I roll. You could use this kind of approach for most veggies and chicken, whatever you like, and change the seasonings up as desired.
2 boneless, skinless chicken breasts
1/2 cup tomatoes, chopped
1/4 cup red onion, thinly sliced
1/4 cup bell pepper, thinly sliced
1 teaspoon minced garlic
1/2 teaspoon basil
1/8 cup balsamic vinegar
1/8 cup olive oil
Preheat oven to 375 degrees. Season chicken with salt and pepper and place in baking dish. Place veggies on top of chicken. Whisk together garlic, basil, vinegar and oil and then pour on top. Bake for 30 minutes. Good served with crusty bread since it gets nice and goopy.
