There hasn’t been a lot of scintillating cooking happening here at Chez CC. Trying to lose weight and eat better seems to end up as really basic dishes made over and over, at least for me. I did make salmon the other day using this recipe for grilled salmon packets. I used the oven rather than the grill, but otherwise made it as described. It turned out really well; the onion and lemon gave the salmon a nice flavor but didn’t overpower it, and the packets kept the fish moist. You could definitely use the basic formula and adapt it to different fish and different seasonings.
